Rainy Day

It has been quite rainy all day today, so I stayed indoors and worked on organizing my scrapbooking pictures and supplies. Now I can get back to working on a scrapbook of Cambria's first year....I've finished Sept-Dec and started on Jan. My goal is to finish it by the first of March!

I had a request for a recipe for Aebeleskivers, which I mentioned in my last post, so here it is. You need a special pan, which I think you can purchase from Williams Sonoma or Crate and Barrel.



Aebelskivers (Danish Pancake Balls) or "Frosted Balls" as Cambria calls them.

1 1/4 C regular all-purpose flour
1/2 tsp salt
2 1/4 tsp baking powder
2 Tb sugar
1/2 tsp ground cinnamon (or carmamom)
1 egg, beaten
1 C milk
About 6 Tb butter or margarine melted and cooled
Powdered sugar
Strawberry jam, raspberry jam
Cinnamon Sugar

Sift flour before measuring, then sift again into a bowl with the salt, baking powder, sugar, and cinnamon. Combine egg, milk, and 2 tablespoons of the butter; add to flour mixture and stir until blended and smooth.

Heat a seasoned aebelskiver pan over medium low heart until water sprinkled in pan sizzles, Brush each cup lightly with melted butter, then fill each about 3/4 full with batter. In about 30 seconds a thin shell witl form on the bottom of each pancake ball. Stick a slender skewer into baked portion and gently pull shell almost halfway up, so unbaked batter flows out.

Continue to rotate each pancke ball about every 30 seconds as the shell begins to set, pulling up the baked shell to let the remaining batter flow out into pan. After about four turns, the ball should be almost formed and you can turn it upside down to seal. Continuje baking, rotationg the balls frequently to make them an even golden brown, until skewer inserted in the center comes out clean. Life balls with skewer from pan as baked. Serve immediately, or keep warm up to 30 minutes in a bun warmer or clohtlined basket on an electric warming tray. Dust with powdered sugar (or cinnamon sugar), break each ball in half,fill with jam and eat out of hand. Makes 12-15 pancake balls.
